Cooking Club Recap...

Thanks to Cassie and Tamara and everyone else who helped with this months cooking club! It was so much fun! Here are some pictures and great recipes:

Bacon and Spinach Quiche recipe

Any single pie crust recipe works well for this quiche. You can always do the easy short cut and buy your pie crust (I prefer the Albertsons in the frozen section).... or you can make your own.

1/2 c chopped onion

6 slices bacon, chopped,

8 beaten eggs,

1/2 c sour cream

1/2 cup half and half, light cream or milk

1/4 tsp. salt

1/8 tsp. white pepper

Dash ground nutmeg (opt.)

3 cups lightly packed, chopped fresh spinach

2/3 cup shredded Low fat Mozzarella cheese

1/2 cup shredded Swiss cheese

1. Line a 9-inch pie crust (un pricked) with aluminum foil (twice, double thickness) Bake in oven for 8 min. at 450 deg.

Remove foil, bake for 4-5 minutes more. Then take it out and reduce temp. to 325 deg

2. Meanwhile, in a large skillet cook onion and bacon until onion is tender and bacon is crisp. Drain on paper towels.

3. In a bowl (kitchen aid worked for me) stir together eggs, sour cream, half and half, salt pepper and nutmeg if desired. Stir in onion/bacon mixture and spinach and cheeses.

4. Pour egg mixture into hot baked pastry shell and bake in the 325 deg. oven 45 to 50 minutes or until a knife inserted near center comes out clean. Also, cover edge of crust with foil to prevent overbrowning. Let stand for 10 minutes before serving (or even up to one hour it will stay warm!)

Grandma’s Coffee Cake

1 pkg. yellow cake mix (This used to be yellow cake from scratch dry ingredients only)

3 eggs

1/4 c. firm butter

1 1/2 cup sour cream

1 cup brown sugar

2/3 cup walnuts (optional)

Heat oven to 350 deg. Measure 2/3 Cup cake mix in small bowl and cut the butter into it. Next, when its cut in well mix in brown sugar and nuts. Beat eggs slightly, mix in sour cream and blend remaining cake mix together- batter will be lumpy.

Pour 1/2 batter in lightly greased glass pan sprinkle 1/2 the topping, then drop/spread remaining batter on top with remaining topping mixture.

Bake 40-45 minutes.




Sticky Buns

28 Rhodes frozen dinner rolls

1 small package vanilly pudding

1 cup brown sugar

1 cube of butter, melted

In an ungreased 9x13 pan place 28 rolls. Sprinkle the package of vanilla pudding over rolls. Combine brown sugar and butter and pour over the top. Sprinkle with cinnamon.

Do all this at bedtime and place in the oven. Let it sit overnight. In the morning heat oven at 350º and bake for 20 min.

Cool for 5 min. and then turn over onto cookie sheet lined with tin foil.
