Here is the recipe for the tart dough:Tart Dough
1 pound butter
1 cup sugar
4 cups all purpose flour
1 Tsp. vanilla extract
Cream butter and sugar. Add vanilla. Add flour and mix after each cup. Don't over mix, mix only til combined. Roll dough or chill until ready to use. Here is the recipe for the pastry cream filling (you can use this for cakes, eclairs, custards and more!):Pastry Cream
16oz whole milk
7 egg yolks
8 ounces sugar=1cup +1T. sugar
1 vanilla bean or 1tsp. vanilla extract
1.25 ounces cornstarch
1 ounce butter
Combine milk, vanilla bean and four ounces of the sugar in a medium sauce pan. Bring to an almost boil.
While milk is heating, combine egg yolks and half the sugar with whisk in seperate bowl. Stir cornstarch with a whisk and make a slurry using 1/4 cup of milk. Stir the cornstarch slurry into egg yolk mixture.
Once the milk is hot, temper it into the egg mixture, by pouring a half of a cup at a timeinto the egg mixture and whisking. Do this until the egg mixture is warm. Pour all liquid back into the pot.
Whisk constantly over medium heat until the mixture boils for 1 mintue. Remove from heat and pour immediately into a metal bowl that is sitting in an ice bath.
Chill until ready to use. For chocolate cream, add 2 1/2 ounces right when you remove it from the heat.
